- 1 bunch broccoli
- 2 Tbsp. margarine
- 1/2 c. chopped onion
- 1 clove minced garlic
- 1 c. Ricotta cheese
- 6 c. cooked noodles
- 1 can condensed cream of chicken soup
- 1/2 tsp. curry powder
- 1 c. shredded Swiss cheese
- 1/2 c. grated Parmesan cheese
Method
- Cut broccoli into bite-sized pieces.
- Cook in covered saucepan over medium heat for 6 minutes; drain.
- Saute onion and garlic in butter until tender.
- Stir in soup and seasoning; mix well.
- Add Swiss and Parmesan cheese, stirring until melted.
- Stir in Ricotta cheese, broccoli and cooked noodles.
- Pour into casserole.
- Cover and bake at 350° until bubbly.
- Makes 8 servings.
