Ingredients

  • 1 bunch broccoli
  • 2 Tbsp. margarine
  • 1/2 c. chopped onion
  • 1 clove minced garlic
  • 1 c. Ricotta cheese
  • 6 c. cooked noodles
  • 1 can condensed cream of chicken soup
  • 1/2 tsp. curry powder
  • 1 c. shredded Swiss cheese
  • 1/2 c. grated Parmesan cheese

Method

  • Cut broccoli into bite-sized pieces.
  • Cook in covered saucepan over medium heat for 6 minutes; drain.
  • Saute onion and garlic in butter until tender.
  • Stir in soup and seasoning; mix well.
  • Add Swiss and Parmesan cheese, stirring until melted.
  • Stir in Ricotta cheese, broccoli and cooked noodles.
  • Pour into casserole.
  • Cover and bake at 350° until bubbly.
  • Makes 8 servings.
