Ingredients

  • 2 (10 oz.) pkg. frozen broccoli (can use fresh)
  • 4 whole chicken breasts
  • 2 cans cream of chicken soup
  • 1 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1/2 tsp. curry powder
  • 1/2 c. shredded Cheddar cheese

Method

  • Boil chicken in salted water until tender.
  • Cut into bite-size pieces.
  • Cook broccoli in salted water 5 minutes and drain.
  • Make sauce of soup, mayonnaise, curry powder and lemon juice.
  • In oblong casserole, place layer of broccoli, layer of chicken and pour sauce over contents.
  • Sprinkle shredded cheese over top. Bake at 350° about 45 minutes.
