Ingredients
- 2 small boxes lime jello
- 1 medium can crushed pineapple, drained (reserve liquid)
- 1 (8 oz.) cream cheese
- 3/4 c. sugar
- 3 eggs
- 1 Tbsp. lemon juice
- 1 large container Cool Whip
- 3 Tbsp. cornstarch
- 8 ice cubes
- shredded cheese (Colby)
Method
- Add jello to 2 cups boiling water.
- Stir until dissolved.
- Add 8 ice cubes; stir until melted.
- Add drained pineapple.
- Chill until firm.
- In saucepan, add eggs, lemon juice and sugar.
- Add pineapple juice and water to equal 1 cup.
- Mix in cornstarch until thickened.
- Let cool and spread on jello.
