Ingredients

  • 2 small boxes lime jello
  • 1 medium can crushed pineapple, drained (reserve liquid)
  • 1 (8 oz.) cream cheese
  • 3/4 c. sugar
  • 3 eggs
  • 1 Tbsp. lemon juice
  • 1 large container Cool Whip
  • 3 Tbsp. cornstarch
  • 8 ice cubes
  • shredded cheese (Colby)

Method

  • Add jello to 2 cups boiling water.
  • Stir until dissolved.
  • Add 8 ice cubes; stir until melted.
  • Add drained pineapple.
  • Chill until firm.
  • In saucepan, add eggs, lemon juice and sugar.
  • Add pineapple juice and water to equal 1 cup.
  • Mix in cornstarch until thickened.
  • Let cool and spread on jello.
