Ingredients

  • 1 bunch green onions
  • crushed fresh garlic
  • 1 can diced green chili peppers or fresh
  • 1 large can whole or stewed tomatoes
  • 1 can garbanzo or red kidney beans
  • 2 Tbsp. olive oil
  • spices to taste: cayenne pepper, chili powder, curry powder, etc.
  • 1 1/2 c. raw bulgar

Method

  • Saute garlic, onions, peppers and bulgar in oil until onions are soft and bulgar is coated with oil.
  • Add spices, tomatoes and beans.
  • Cover and bring to a low boil.
  • Simmer 15 minutes or until liquid is absorbed and bulgar is tender.
