Ingredients
- 1 bunch green onions
- crushed fresh garlic
- 1 can diced green chili peppers or fresh
- 1 large can whole or stewed tomatoes
- 1 can garbanzo or red kidney beans
- 2 Tbsp. olive oil
- spices to taste: cayenne pepper, chili powder, curry powder, etc.
- 1 1/2 c. raw bulgar
Method
- Saute garlic, onions, peppers and bulgar in oil until onions are soft and bulgar is coated with oil.
- Add spices, tomatoes and beans.
- Cover and bring to a low boil.
- Simmer 15 minutes or until liquid is absorbed and bulgar is tender.
