Ingredients

  • 5 slices bacon
  • 1 1/2 c. diced onion (about 3 medium onions)
  • 1 1/2 c. diced celery
  • 1/2 c. diced carrots
  • 1/2 c. (1 stick) butter
  • 7 c. peeled and diced potatoes (about 12 medium potatoes)
  • water
  • 1 tsp. Old Bay seasoning
  • 1 tsp. garlic salt
  • 1 tsp. freshly ground pepper
  • 2 (10 oz.) cans whole clams
  • 2 (12 oz.) cans evaporated milk

Method

  • Place the bacon in an 8-quart pot with a heavy bottom.
  • Cook over medium heat until just browned; pour off the grease.
  • Add the onions, celery, carrots and butter to the bacon; saute until the vegetables are tender, about 10 minutes.
