- 5 slices bacon
- 1 1/2 c. diced onion (about 3 medium onions)
- 1 1/2 c. diced celery
- 1/2 c. diced carrots
- 1/2 c. (1 stick) butter
- 7 c. peeled and diced potatoes (about 12 medium potatoes)
- water
- 1 tsp. Old Bay seasoning
- 1 tsp. garlic salt
- 1 tsp. freshly ground pepper
- 2 (10 oz.) cans whole clams
- 2 (12 oz.) cans evaporated milk
Method
- Place the bacon in an 8-quart pot with a heavy bottom.
- Cook over medium heat until just browned; pour off the grease.
- Add the onions, celery, carrots and butter to the bacon; saute until the vegetables are tender, about 10 minutes.
