Ingredients

  • 2 1/4 c. flour
  • 1 Tbsp. baking powder
  • 1 1/2 tsp. salt
  • 2 large eggs
  • 1/2 c. plus 2 Tbsp. sugar
  • 1/2 c. melted Crisco
  • 1/2 c. milk
  • 1 1/2 c. blueberries

Method

  • Preheat oven to 400°.
  • Grease 18 muffin pan cups.
  • Sift dry ingredients in bowl.
  • Combine egg, sugar, melted shortening and milk; whisk until smooth.
  • Stir dry ingredients into egg mixture with rubber spatula just until combined.
  • Fold in 1 1/2 cups blueberries; spoon batter into prepared muffin cups.
  • Bake for 15 to 20 minutes, until toothpick inserted in center of muffin comes out clean.
  • Immediately remove muffins from cups.
  • Serve warm. Makes 1 1/2 dozen.
