Ingredients
- 2 1/4 c. flour
- 1 Tbsp. baking powder
- 1 1/2 tsp. salt
- 2 large eggs
- 1/2 c. plus 2 Tbsp. sugar
- 1/2 c. melted Crisco
- 1/2 c. milk
- 1 1/2 c. blueberries
Method
- Preheat oven to 400°.
- Grease 18 muffin pan cups.
- Sift dry ingredients in bowl.
- Combine egg, sugar, melted shortening and milk; whisk until smooth.
- Stir dry ingredients into egg mixture with rubber spatula just until combined.
- Fold in 1 1/2 cups blueberries; spoon batter into prepared muffin cups.
- Bake for 15 to 20 minutes, until toothpick inserted in center of muffin comes out clean.
- Immediately remove muffins from cups.
- Serve warm. Makes 1 1/2 dozen.
