Ingredients

  • 8 slices bacon halved
  • 1 avocado small, peeled, mashed
  • 1 shallot finely chopped
  • 1 tablespoon lemon juice
  • 6 slices white sandwich bread
  • 2 Roma tomatoes thinly sliced
  • 1 ounce mixed greens

Method

  • Heat a large frying pan over medium-high heat. Add bacon and cook, turning occasionally, for 5 mins, or until brown and crisp. Drain on paper towels.
  • Combine avocado, shallot and lemon (or lime) juice. Season. Spread over 2 slices of bread. Top with bacon, tomato and mixed greens. Repeat layers, finishing with bread. Cut in half and serve immediately.
