Ingredients
- 8 slices bacon halved
- 1 avocado small, peeled, mashed
- 1 shallot finely chopped
- 1 tablespoon lemon juice
- 6 slices white sandwich bread
- 2 Roma tomatoes thinly sliced
- 1 ounce mixed greens
Method
- Heat a large frying pan over medium-high heat. Add bacon and cook, turning occasionally, for 5 mins, or until brown and crisp. Drain on paper towels.
- Combine avocado, shallot and lemon (or lime) juice. Season. Spread over 2 slices of bread. Top with bacon, tomato and mixed greens. Repeat layers, finishing with bread. Cut in half and serve immediately.
