Ingredients

  • 6 1/2 cups red grapes
  • 2 3/8 cups flour
  • 1 2/3 tablespoons yeast brewer's
  • 3/4 cup granulated sugar
  • 3 3/8 tablespoons extra-virgin olive oil

Method

  • Preheat the oven to 180C.
  • Dissolve the yeast in some warm water, knead it together with the flour, sugar, oil, and a pinch of salt, adding more warm water until the dough is soft, elastic and no longer sticks to your hands.
  • Shape the dough into a ball, cover it and let it rise in a warm area for a few hours.
  • Wash the grapes well and separate them from the stems.
  • Knead the dough again for a few more minutes, divide it into two parts and roll it out to two thick sheets.
  • Line a rectangular baking sheet with wax paper brushed with oil and place the sheet of dough on it.
  • Place the grapes on the dough (keep a handful of the grapes aside for later), sprinkle with sugar, and cover with the second sheet of dough.
  • Pinch the edges of the dough together to seal them closed.
  • Brush the dough with oil, garnish with the grapes set aside earlier and sprinkle with sugar.
  • Bake for approximately 45 minutes.
  • Serve warm sprinkled with more sugar.
