Ingredients
- 1 large Texas Sweet or Vidalia onion
- boiling water
- beaten egg
- ice water
- 2 Tbsp. flour
- 1 c. cracker crumbs or coating mix
- oil for deep frying
Method
- Select a well rounded onion.
- Peel outer skin off.
- Leave root intact.
- Cut off any hanging roots.
- Using small sharp knife, divide onion into four sections by making 2 cuts crosswise, beginning at the top and cut toward the root, stop 1/2-inch from root.
- Cut each section twice.
- Place onion in a bowl of boiling water to cover it and leave 5 minutes.
- This will open the onion up.
- Soon as they open, put in ice water.
- This helps with the opening.
- Drain well, drain upside down.
- Put flour in paper bag, add onion in beaten egg to cover.
- Put cracker crumbs or coating in paper bag. Add onion and shake gently to coat.
- Refrigerate for 1 hour before deep frying to a golden brown, 3 to 5 minutes. Cooked onion may be kept for a time in warm oven.
- Use favorite dip.
