Ingredients

  • 1 large Texas Sweet or Vidalia onion
  • boiling water
  • beaten egg
  • ice water
  • 2 Tbsp. flour
  • 1 c. cracker crumbs or coating mix
  • oil for deep frying

Method

  • Select a well rounded onion.
  • Peel outer skin off.
  • Leave root intact.
  • Cut off any hanging roots.
  • Using small sharp knife, divide onion into four sections by making 2 cuts crosswise, beginning at the top and cut toward the root, stop 1/2-inch from root.
  • Cut each section twice.
  • Place onion in a bowl of boiling water to cover it and leave 5 minutes.
  • This will open the onion up.
  • Soon as they open, put in ice water.
  • This helps with the opening.
  • Drain well, drain upside down.
  • Put flour in paper bag, add onion in beaten egg to cover.
  • Put cracker crumbs or coating in paper bag. Add onion and shake gently to coat.
  • Refrigerate for 1 hour before deep frying to a golden brown, 3 to 5 minutes. Cooked onion may be kept for a time in warm oven.
  • Use favorite dip.
