Ingredients

  • 1 pound Thin Sliced Chicken Breasts
  • Olive Oil
  • Blackening Seasoning (like Zatarain's)
  • 1 Green Bell Pepper, Sliced
  • 1 Red Bell Pepper, Sliced
  • 1 Medium Onion, Sliced In Half Rings
  • 8 Flour Tortillas, Warmed
  • Toppings Of Your Choice, Such As Shredded Cheese, Sour Cream, And Guacamole

Method

  • Brush each chicken breast with olive oil.
  • Sprinkle with blackened seasoning.
  • Heat a cast iron skillet over high heat.
  • Cook each chicken breast 1 1/2 to 2 minutes, until charred and cooked through.
  • Remove chicken and keep warm.
  • Reduce heat to medium high.
  • Add about 1 tablespoon of olive oil to the pan.
  • Add sliced peppers and onions and cook, stirring occasionally, until crisp tender, about 45 minutes.
  • Slice the chicken and serve with peppers and onions in tortillas with toppings of your choice.
