Ingredients

  • 250 gm Blackcurrants, (8oz)
  • 3 Tbsp. Orange juice
  • 75 gm Icing sugar, sifted (3oz)
  • 284 ml Whipping cream, (1/2 pint) Blackcurrants and whipped cream to decorate

Method

  • 1.
  • Puree the blackcurrants and orange juice, then stir in the icing sugar.
  • 2.
  • Whip the cream till fairly thick and fold into the blackcurrant mix.
  • 3.
  • Spoon the mix into a 500g(1lb) loaf tin.
  • Cover with clingfilm or possibly foil and freeze till hard.
  • 4.
  • Turn out onto a plate and decorate with blackcurrant and whipped cream before serving.
  • Redcurrants or possibly blackcurrants may be used in this recipe.
  • NOTES : Deliciously refreshing dessert for a special summer meal.
