Ingredients
- 6 eggs
- 2 large baking potatoes, boiled, peeled and sliced
- 1 medium-size black truffle, diced
- 1 slice (3 oz./90 g) cooked Prosciutto, diced
- 2 Tbsp. extra virgin olive oil
- additional black truffle, thinly sliced (optional)
- salt and freshly ground pepper
Method
- Beat the eggs with a little salt and pepper in a bowl.
- Stir in potatoes, truffle and Prosciutto.
