- 1 1/2 lb. cubed, cooked chicken breasts
- 2 c. onion, chopped
- 2 cloves garlic, minced
- 2 Tbsp. oil
- 3 medium carrots, sliced (1 1/2 c.)
- 1 (8 oz.) tomato sauce
- 2 fresh tomatoes, peeled and chopped
- 3/4 c. picante sauce
- 1 1/2 tsp. ground cumin
- 1 tsp. ground coriander
- 1/2 tsp. salt
- 1 can kidney beans
- 1 large green pepper, cut in large pieces
Method
- Combine all ingredients in large soup pot and simmer 30 to 45 minutes.
- Serve over artichoke shells or steamed brown rice.
