Ingredients

  • 1 1/2 lb. cubed, cooked chicken breasts
  • 2 c. onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp. oil
  • 3 medium carrots, sliced (1 1/2 c.)
  • 1 (8 oz.) tomato sauce
  • 2 fresh tomatoes, peeled and chopped
  • 3/4 c. picante sauce
  • 1 1/2 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1/2 tsp. salt
  • 1 can kidney beans
  • 1 large green pepper, cut in large pieces

Method

  • Combine all ingredients in large soup pot and simmer 30 to 45 minutes.
  • Serve over artichoke shells or steamed brown rice.
