Ingredients

  • 3 lb. lean beef
  • 1/4 c. vegetable oil
  • 1 large onion, sliced
  • 1/4 c. all purpose flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/4 c. dry red wine
  • 1/4 c. strong coffee
  • 3 cloves garlic, minced
  • 3/4 dried thyme

Method

  • In heavy pan brown meat; remove meat and cook onion in hot oil. Combine flour, salt and pepper; toss with meat and return to pan. Cook and stir to brown flour.
  • Add remaining ingredients, cover and simmer for 2 hours.
  • Lift out cooked meat and onions with slotted spoon.
  • Boil sauce to thicken.
  • Adjust seasoning if necessary. Return meat and onion and heat.
  • Serve with sliced sauteed mushrooms if desired.
