Ingredients
- 3 lb. lean beef
- 1/4 c. vegetable oil
- 1 large onion, sliced
- 1/4 c. all purpose flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 1/4 c. dry red wine
- 1/4 c. strong coffee
- 3 cloves garlic, minced
- 3/4 dried thyme
Method
- In heavy pan brown meat; remove meat and cook onion in hot oil. Combine flour, salt and pepper; toss with meat and return to pan. Cook and stir to brown flour.
- Add remaining ingredients, cover and simmer for 2 hours.
- Lift out cooked meat and onions with slotted spoon.
- Boil sauce to thicken.
- Adjust seasoning if necessary. Return meat and onion and heat.
- Serve with sliced sauteed mushrooms if desired.
