Ingredients

  • 1 3/4 c. whole wheat flour
  • 3/4 tsp. cream of tartar
  • 3/4 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/3 c. unsweetened cocoa powder
  • 1 1/4 c. honey
  • 3/4 c. unsweetened applesauce
  • 1 tsp. vanilla
  • 3 egg whites, lightly beaten
  • 3/4 c. fruit-juice-sweetened cherry preserves
  • 1 recipe Fluffy Cocoa Frosting, varied to vanilla

Method

  • Preheat oven to 325°.
  • In large bowl, sift flour, cream of tartar, baking soda, cinnamon and cocoa.
  • Set aside.
  • In medium bowl, combine applesauce, honey, egg whites and vanilla.
  • Gently stir into flour mixture and mix until just blended.
