- 1 (8 oz.) pkg. cream cheese, softened
- 1 egg
- 1/3 c. sugar
- 1/8 tsp. salt
- 1 c. chocolate chips
- 1 1/2 c. flour
- 1 c. sugar
- 1/4 c. cocoa
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. water
- 1/3 c. oil
- 1 Tbsp. vinegar
- 1 tsp. vanilla
Method
- Combine the first 4 ingredients; beat well.
- Stir in chocolate chips.
- Set aside.
- Mix flour, sugar, cocoa, soda and salt.
- Add remaining ingredients to the flour mixture and beat well.
- Fill muffin cups 1/3 full with chocolate batter; top with heaping teaspoonfuls of cream cheese mixture.
- Sprinkle with granulated sugar and chopped nuts.
- Bake at 350° for 25 to 30 minutes.
- Makes 18 cupcakes.
