Ingredients

  • 1 (16 oz.) pkg. black beans
  • 1 1/3 c. rice (precooked volume)
  • 1 (13 1/2 oz.) can chicken broth
  • 2 medium onions, chopped
  • 1 medium carrot, chopped
  • 1 tsp. salt substitute
  • 1/2 tsp. cayenne pepper

Method

  • Soak beans according to package directions; drain off water. Place beans in a large pot.
  • Add enough fresh water to cover beans by about 2 inches.
  • Add carrot, onions, chicken broth, salt substitute and cayenne pepper.
  • Bring to boil, then reduce heat and simmer covered until beans are done (at least 1 1/2 to 2 hours).
  • Stir occasionally and check for adequate water level. Prepare rice according to package directions.
  • Serve beans on top of rice.
