Ingredients

  • 1 (16 ounce.) pkg. black beans
  • 1 tbsp. canola oil
  • 1 lg. onion, diced
  • 1 lg. green pepper, diced
  • 1 lg. clove garlic, chopped
  • 1 (15 ounce.) can tomato sauce
  • 1/2 teaspoon pepper
  • 8 c. water

Method

  • Rinse beans and pick over.
  • In large saucepan, heat beans and 8 c. water to boiling.
  • Boil 3 min.
  • Remove pot from stove, let stand for 1 hour.
  • In large skillet, in warm oil, cook onion, green pepper and garlic till tender.
  • Stir onion mix into undrained beans.
  • Add in tomato sauce and black pepper.
  • Heat to boiling.
  • Reduce heat and let mix simmer for 2 hrs or possibly till beans are tender.
