Ingredients
- 1 (16 ounce.) pkg. black beans
- 1 tbsp. canola oil
- 1 lg. onion, diced
- 1 lg. green pepper, diced
- 1 lg. clove garlic, chopped
- 1 (15 ounce.) can tomato sauce
- 1/2 teaspoon pepper
- 8 c. water
Method
- Rinse beans and pick over.
- In large saucepan, heat beans and 8 c. water to boiling.
- Boil 3 min.
- Remove pot from stove, let stand for 1 hour.
- In large skillet, in warm oil, cook onion, green pepper and garlic till tender.
- Stir onion mix into undrained beans.
- Add in tomato sauce and black pepper.
- Heat to boiling.
- Reduce heat and let mix simmer for 2 hrs or possibly till beans are tender.
