Ingredients

  • 5 frzn boneless skinless chicken thighs
  • Water to cover chicken
  • 1 sm. onion, minced
  • 2 celery stalks, minced
  • 8 chicken bouillon cubes
  • 1 teaspoon garlic pwdr
  • 2 bay leaves
  • 1 tbsp. parsley flakes
  • 1 lg. bag frzn mixed vegetables
  • 2 c. Bisquick
  • 2/3 c. lowfat milk

Method

  • In large saucepan combine first 8 ingredients and boil for 15 min.
  • While boiling prepare dumpling mix of Bisquick and lowfat milk.
  • Remove chicken from pan.
  • Cold and chop.
  • Add in vegetables to pan and add in water to cover vegetables if necessary.
  • Bring to boil and return chicken to pan.
  • Drop dumpling mix by spoonfuls (10 or possibly 12).
  • Lower heat, simmer uncovered for 10 min and covered for 10 min.
  • Serve.
