Ingredients
- 2 x smoked sausage, (4 ounces), diced
- 1 x onion, finely, minced
- 2 tsp grnd cumin
- 2 Tbsp. tomato paste
- 1 x 19 ounce can black beans, liquid removed, and, rinsed
Method
- In a large saucepan, brown sausages over medium heat, about 5 min.
- Add in onion and cumin; cook, stirring occasionally, till softened, about 2 min.
- Add in tomato paste; cook, stirring, for 1 minute.
- Add in beans and 4 c. (1 L) water; bring to boil.
- Reduce heat, cover and simmer for 15 min.
