Ingredients

  • 2 x smoked sausage, (4 ounces), diced
  • 1 x onion, finely, minced
  • 2 tsp grnd cumin
  • 2 Tbsp. tomato paste
  • 1 x 19 ounce can black beans, liquid removed, and, rinsed

Method

  • In a large saucepan, brown sausages over medium heat, about 5 min.
  • Add in onion and cumin; cook, stirring occasionally, till softened, about 2 min.
  • Add in tomato paste; cook, stirring, for 1 minute.
  • Add in beans and 4 c. (1 L) water; bring to boil.
  • Reduce heat, cover and simmer for 15 min.
