- 2 lb. fresh mussels
- 3 tbsp. oil
- 2 large onions, finely chopped
- 4 cloves garlic, finely chopped
- 3 tsp. finely chopped fresh ginger
- 3 fresh chillies, seeded, chopped(use up to 5 and leave seeds if you like it very hot)
- 1/2 tsp. ground tumeric
- 3 tsp. ground coriander
- pinch chilli powder, optional
- 1/2 tsp. salt
- 1 c. water
- 1 tbsp. chopped fresh coriander leaves
- lemon juice to taste
Method
- Scrub mussels and beard them. Heat oil in large, deep pan. Fry onions, garlic and ginger slowly until onions are golden.
- Add chillies, turmeric and coriander.
- Stir carefully for a few minutes.
- Add salt and water and simmer covered for 5 minutes. Add mussels, cover and steam until mussels open.
- Remove from heat and add fresh coriander.
- Add lemon juice and salt to taste. Spoon liquid mixture into mussel shells and serve.
