Ingredients

  • 2 lb. fresh mussels
  • 3 tbsp. oil
  • 2 large onions, finely chopped
  • 4 cloves garlic, finely chopped
  • 3 tsp. finely chopped fresh ginger
  • 3 fresh chillies, seeded, chopped(use up to 5 and leave seeds if you like it very hot)
  • 1/2 tsp. ground tumeric
  • 3 tsp. ground coriander
  • pinch chilli powder, optional
  • 1/2 tsp. salt
  • 1 c. water
  • 1 tbsp. chopped fresh coriander leaves
  • lemon juice to taste

Method

  • Scrub mussels and beard them. Heat oil in large, deep pan. Fry onions, garlic and ginger slowly until onions are golden.
  • Add chillies, turmeric and coriander.
  • Stir carefully for a few minutes.
  • Add salt and water and simmer covered for 5 minutes. Add mussels, cover and steam until mussels open.
  • Remove from heat and add fresh coriander.
  • Add lemon juice and salt to taste. Spoon liquid mixture into mussel shells and serve.
