Ingredients

  • 1 pkg. peach gelatin
  • 1 c. hot water
  • 3 oz. cream cheese
  • 1 c. whipped topping
  • 2 c. chopped ripe peaches, sweetened to taste

Method

  • Dissolve
  • gelatin in hot
  • water.
  • Chill
  • to
  • egg
  • white consistency.
  • Beat with electric
  • beater
  • at
  • high speed until double in quantity.
  • Add softened
  • cream cheese which has been previously mixed with whipped
  • topping.
  • Beat
  • until
  • smooth. Add peaches and beat at low speed
  • for 1 minute.
  • Pour in mold and chill thoroughly.
  • When congealed, unmold and garnish with lettuce and peach slices.
  • Serves 6 to 8.
