Ingredients

  • 2 (15 oz.) cans black beans, drained and rinsed
  • 1 (17 oz.) can Shoepeg corn, drained
  • 2 large tomatoes, seeded and chopped
  • 1 purple onion, chopped
  • 1/4 c. fresh cilantro, chopped
  • 4 Tbsp. lime juice
  • 2 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • 1 tsp. cumin
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 avocado, peeled, chopped and soaked in 1 Tbsp. lemon juice

Method

  • Mix ingredients together in a large bowl and serve with your favorite tortilla chips. A healthy snack and great for when the gang's over to watch the game!
