Ingredients
- 2 cups sweet potatoes, cooked and mashed
- 2 tablespoons butter, melted
- 2 eggs, separated
- 1 cup milk
- 1/2 cup flour
- 1 teaspoon baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- oil, for deep frying
Method
- Mix together potatoes, butter, egg yolks, and milk.
- Mix and sift flour, baking powder, sugar, and salt; stir into potato mixture.
- Fold in stiffly beaten egg whites,.
- Drop by spoonfuls into hot deep oil and fry for 2-4 minutes until golden brown.
- Drain on absorbant paper. Serve hot.
