Ingredients
- 2 Tbsp. chopped fresh parsley
- 2 Tbsp. fresh lime juice
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 2 cans (15 oz.) black beans, rinsed and drained
- 1 c. chopped fresh tomatoes
- 1 diced avocado
- 4 Tbsp. chopped green onion
- 2 Tbsp. chopped seeded jalapeno pepper
Method
- Combine parsley, lime juice, salt and black pepper. Stir well with a whisk. Add remaining ingredients, tossing well. Cover and chill 2 hours. Serve over salad greens. Serves 6 to 8.
