Ingredients
- 1 whole Medium Onion, Minced
- 3 cloves Garlic, Minced
- 1 Tablespoon Olive Oil
- 3 cans (15 Oz. Size) Black Beans, Drained And Rinsed, Divided
- 2 cups Vegetable Broth
- 1-1/2 cup Salsa
- 1-1/2 teaspoon Cumin
- Sour Cream And Chopped Green Onions, For Garnish
Method
- 1. In a stock pot, saute minced onion and garlic in olive oil.
- 2. In a blender or food processor, combine 2/3 of the beans, broth, salsa, and cumin. Blend until smooth.
- 3. Add the bean mixture and remaining beans to the stock pot and heat over medium heat for approximately 10 minutes or until thoroughly heated.
- 4. Ladle soup into individual bowls and top each bowl with a dollop of sour cream. Sprinkle with green onions. Serve with your favorite bread.
