Ingredients
- 1 (16 oz.) can black beans
- `1 green bell pepper
- 1/2 jalapeno pepper (optional)
- 1 lime
- 3 Tbsp. chopped red onion
- 2 Tbsp. chopped fresh parsley
- salt and pepper
Method
- Drain and rinse the black beans.
- Chop the green pepper and the jalapeno pepper.
- Grate the green zest from the lime and squeeze 1 tablespoon juice.
- Combine the black beans with the green pepper, jalapeno pepper, lime zest and juice, red onion, chopped parsley, 1/2 teaspoon salt and 1/4 teaspoon pepper; toss well.
