Ingredients

  • 1 (16 oz.) can black beans
  • `1 green bell pepper
  • 1/2 jalapeno pepper (optional)
  • 1 lime
  • 3 Tbsp. chopped red onion
  • 2 Tbsp. chopped fresh parsley
  • salt and pepper

Method

  • Drain and rinse the black beans.
  • Chop the green pepper and the jalapeno pepper.
  • Grate the green zest from the lime and squeeze 1 tablespoon juice.
  • Combine the black beans with the green pepper, jalapeno pepper, lime zest and juice, red onion, chopped parsley, 1/2 teaspoon salt and 1/4 teaspoon pepper; toss well.
