Ingredients

  • 1 tbsp Olive Oil
  • 1/2 lb Turkey bacon chopped
  • 1/2 Yellow onion
  • 1 medium Carrot, peeled and grated
  • 1 Celery stalk trimmed & chopped
  • 2 Garlic cloves minced
  • 2 medium Jalapenos seeded & chopped
  • 1/2 tsp Salt
  • 1 cup Beef broth
  • 1/4 Light brown sugar
  • 1/4 cup Ketchup
  • 3 tbsp Dark molasses
  • 2 tsp Dijon mustard
  • 1/4 tsp Pepper to tast
  • 2 tbsp Apple cider vinegar
  • 2 can Black beans
  • 1/4 cup Chopped cilantro

Method

  • Preheat oven to 400F.
  • Cook oil over medium high heat.
  • Add bacon, onion, carrot, celery, garlic, jalapeno and salt
  • Cook 7-10 minutes.
  • Reduce heat to low and add broth, brown sugar, molases, mustard, ketchup, cider vinegar and pepper
  • Add beans to coat
  • Transfer beans and bake uncovered for 45-60 minutes until the beans are hot and a dark crust begins to form
  • Sprinkle cilantro
