- 1 tbsp Olive Oil
- 1/2 lb Turkey bacon chopped
- 1/2 Yellow onion
- 1 medium Carrot, peeled and grated
- 1 Celery stalk trimmed & chopped
- 2 Garlic cloves minced
- 2 medium Jalapenos seeded & chopped
- 1/2 tsp Salt
- 1 cup Beef broth
- 1/4 Light brown sugar
- 1/4 cup Ketchup
- 3 tbsp Dark molasses
- 2 tsp Dijon mustard
- 1/4 tsp Pepper to tast
- 2 tbsp Apple cider vinegar
- 2 can Black beans
- 1/4 cup Chopped cilantro
Method
- Preheat oven to 400F.
- Cook oil over medium high heat.
- Add bacon, onion, carrot, celery, garlic, jalapeno and salt
- Cook 7-10 minutes.
- Reduce heat to low and add broth, brown sugar, molases, mustard, ketchup, cider vinegar and pepper
- Add beans to coat
- Transfer beans and bake uncovered for 45-60 minutes until the beans are hot and a dark crust begins to form
- Sprinkle cilantro
