Ingredients
- 1 pound, 1-2/3 ounces, weight Bitter Gourd, Core Removed And Cut Into Chunks
- 1-1/2 pounds, 2-1/2 ounces, weight Chicken Pieces, With Bones
- 1 whole Carrot, Peeled And Cut Into Chunks
- 5 whole Chinese Dried Mushrooms
- 1/2 cups Yu-zhu/Yuk-chuk ()
- 1/3 cups Dried Scallops
- 6 cups Water
- 1 teaspoon Salt To Taste
Method
- Cut bitter gourd in half lengthwise. Remove/scoop out all the seeds and white spongy stuff. Cut into pieces.
- Place all ingredients in a pot. Cook under pressure for 45 minutes.
- Leave to cool on its own. (If not using a pressure cooker, you can simmer it for at least 2 hours.)
- Season with salt.
