Ingredients

  • 1 pound, 1-2/3 ounces, weight Bitter Gourd, Core Removed And Cut Into Chunks
  • 1-1/2 pounds, 2-1/2 ounces, weight Chicken Pieces, With Bones
  • 1 whole Carrot, Peeled And Cut Into Chunks
  • 5 whole Chinese Dried Mushrooms
  • 1/2 cups Yu-zhu/Yuk-chuk ()
  • 1/3 cups Dried Scallops
  • 6 cups Water
  • 1 teaspoon Salt To Taste

Method

  • Cut bitter gourd in half lengthwise. Remove/scoop out all the seeds and white spongy stuff. Cut into pieces.
  • Place all ingredients in a pot. Cook under pressure for 45 minutes.
  • Leave to cool on its own. (If not using a pressure cooker, you can simmer it for at least 2 hours.)
  • Season with salt.
