Ingredients

  • 6 eggs, separated
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 2/3 c. flour or 1/3 c. flour and 1/3 c. cocoa
  • 1/2 tsp. baking powder

Method

  • Heat oven to 350°.
  • Beat egg whites and set aside.
  • Combine egg yolks, sugar and vanilla.
  • Beat until creamy.
  • Mix flour and baking powder or flour and cocoa and baking powder.
  • Put egg whites over egg yolks mixture.
  • Sift flour mixture over egg whites.
  • Fold under gently; don't stir.
  • Put mixture on cookie sheet, lined with wax paper.
  • Smooth even.
  • Bake on top shelf in oven at 350° until golden brown, about 7 minutes.
