Ingredients

  • 1 lb. butter (no substitutes)
  • 2 c. sugar
  • 4 eggs, separated
  • 4 1/2 c. flour
  • 2 tsp. vanilla
  • 2 c. pecans, chopped fine
  • strawberry jam

Method

  • Cream butter and sugar, add egg yolks, flour and vanilla; mix well.
  • Roll into balls the size of walnuts.
  • Dip each ball into egg whites, then into finely chopped nuts.
  • Put indentation in ball with your thumb.
  • Place on an ungreased cookie sheet in 350° oven for 5 minutes.
  • Remove and put bit of jam in center of each cookie and continue baking until brown, about 10 more minutes. Makes 84 cookies.
