Ingredients
- 1 lb. butter (no substitutes)
- 2 c. sugar
- 4 eggs, separated
- 4 1/2 c. flour
- 2 tsp. vanilla
- 2 c. pecans, chopped fine
- strawberry jam
Method
- Cream butter and sugar, add egg yolks, flour and vanilla; mix well.
- Roll into balls the size of walnuts.
- Dip each ball into egg whites, then into finely chopped nuts.
- Put indentation in ball with your thumb.
- Place on an ungreased cookie sheet in 350° oven for 5 minutes.
- Remove and put bit of jam in center of each cookie and continue baking until brown, about 10 more minutes. Makes 84 cookies.
