Ingredients

  • 2 1/2 lb. steak
  • 2 Tbsp. butter
  • 1 c. sliced mushrooms
  • 1 Tbsp. chopped shallots
  • 1 tsp. flour
  • 1 tsp. lemon juice
  • 1 c. dry red wine
  • salt and freshly ground pepper
  • 1 Tbsp. cream
  • 1 tsp. chopped parsley

Method

  • Saute shallots and mushrooms in butter.
  • Blend in flour, wine, lemon juice, salt and pepper to taste.
  • Simmer until liquid is reduced to 1/2 cup.
  • Stir in cream and simmer a few seconds longer.
  • Pan broil steak.
  • Remove steak to platter with its pan juices.
  • Pour on sauce and sprinkle with parsley and serve. Yield: 4 servings.
