Ingredients
- 2 1/2 lb. steak
- 2 Tbsp. butter
- 1 c. sliced mushrooms
- 1 Tbsp. chopped shallots
- 1 tsp. flour
- 1 tsp. lemon juice
- 1 c. dry red wine
- salt and freshly ground pepper
- 1 Tbsp. cream
- 1 tsp. chopped parsley
Method
- Saute shallots and mushrooms in butter.
- Blend in flour, wine, lemon juice, salt and pepper to taste.
- Simmer until liquid is reduced to 1/2 cup.
- Stir in cream and simmer a few seconds longer.
- Pan broil steak.
- Remove steak to platter with its pan juices.
- Pour on sauce and sprinkle with parsley and serve. Yield: 4 servings.
