Ingredients

  • 1 lb. ground lean beef
  • 2/3 c. evaporated milk (can use regular milk)
  • 1/3 c. fine dry bread crumbs
  • 1/4 c. catsup or chili sauce
  • 1 tsp. salt
  • 2 tsp. Worcestershire sauce
  • 1/4 tsp. pepper
  • 3 medium potatoes
  • 3 medium onions
  • 3 medium carrots
  • 3 tsp. dried parsley flakes
  • 1 tsp. salt
  • few grains pepper

Method

  • Peel and slice (1/4-inch thick) the vegetables.
  • Mix dried parsley flakes, salt and pepper.
  • Place vegetables in layers around the meat loaf.
  • Sprinkle each layer with a part of the salt mixture.
  • Cover pan tightly with foil.
  • Bake in a 375° oven for 1 hour, or until vegetables are tender.
  • Uncover and bake 10 minutes longer to brown meat.
