Ingredients

  • 6 Tbsp. instant mashed potato granules
  • 1 c. water
  • 1/2 c. skim milk
  • 4 tsp. diet margarine
  • 3 tsp. vegetable oil
  • 1 1/2 c. sliced fresh mushrooms (5 oz.)
  • 1 1/2 c. thinly sliced onion
  • 2 cloves crushed garlic
  • 1 lb. lean ground turkey
  • 1 (10 3/4 oz.) can tomato soup (condensed)
  • 1/2 c. frozen peas
  • 1/4 c. chicken broth
  • 1/4 tsp. black pepper
  • chopped parsley (fresh)

Method

  • Heat oven to 350°.
  • Spray a 2-quart baking dish with nonstick cooking spray.
  • Prepare mashed potatoes according to package directions using water, skim milk and diet margarine (omit salt called for on package).
  • Set aside.
