Ingredients
- 3 c. sugar
- 1/2 c. water
- 2 tsp. baking soda
- 1 c. light corn syrup
- 2 c. salted peanuts
Method
- In a heavy saucepan, stir together the sugar, corn syrup and water.
- Cook over medium heat, stirring constantly, until sugar is dissolved and mixture comes to a boil.
- Cook, without stirring, until temperature reaches 280° on candy thermometer or until small amount dropped into cold water separates into a thread that is hard, but not brittle.
- Stir in peanuts so mixture continues to boil.
- Cook, stirring often, until temperature reaches 300° or until dropped into cold water separates into threads that are hard and brittle.
- Remove from heat.
- Pour into buttered pan without spreading.
- When cool, bread into pieces.
- Makes 2 1/2 pounds.
