Ingredients

  • 3 c. sugar
  • 1/2 c. water
  • 2 tsp. baking soda
  • 1 c. light corn syrup
  • 2 c. salted peanuts

Method

  • In a heavy saucepan, stir together the sugar, corn syrup and water.
  • Cook over medium heat, stirring constantly, until sugar is dissolved and mixture comes to a boil.
  • Cook, without stirring, until temperature reaches 280° on candy thermometer or until small amount dropped into cold water separates into a thread that is hard, but not brittle.
  • Stir in peanuts so mixture continues to boil.
  • Cook, stirring often, until temperature reaches 300° or until dropped into cold water separates into threads that are hard and brittle.
  • Remove from heat.
  • Pour into buttered pan without spreading.
  • When cool, bread into pieces.
  • Makes 2 1/2 pounds.
