Ingredients

  • 1 x cucumber - (6 ounce) peeled, and halved horizontally
  • 2 Tbsp. reduced-fat cream cheese
  • 2 tsp lite mayonnaise
  • 1/4 tsp instant chopped onion
  • 1/4 tsp lemon juice
  • 1 dsh warm pepper sauce
  • 1 dsh green food coloring - (to 2)
  • 2 slc whole-grain bread toasted

Method

  • Remove any large seeds from the cucumber with a spoon and grate the flesh with a standard grater into a small bowl.
  • Add in the remaining ingredients except the bread and mix till fairly smooth and easy to spread.
  • Chill the filling for 1 hour.
  • Spread the mix on the toasted whole-grain bread.
  • Cut into quarters diagonally and serve.
  • This recipe yields 1 serving.
