Ingredients
- 1 lb. ground beef or turkey
- 1/4 c. chopped onion
- 1 clove garlic
- 2 Tbsp. oil
- 1 Tbsp. flour
- 1 tsp. salt and pepper
- 1 tsp. oregano
- 2 large ripe tomatoes
- 1 medium eggplant
- 1 c. grated sharp cheese
Method
- Brown meat, onion and mashed garlic in oil.
- Add flour and seasonings.
- Stir and cook for 5 minutes.
- Remove garlic.
- Peel and slice eggplant.
- Boil in salted water until just tender. Drain and set aside. Put browned meat on bottom of 1 1/2-quart casserole.
- Arrange slices of cooked eggplant and sliced tomatoes on top.
- Sprinkle with salt and pepper.
- Cover with grated cheese.
- Bake at 350° for 30 to 40 minutes until cheese is melted and bubbly.
- Makes 4 to 6 servings.
