Ingredients

  • 1 lb. ground beef or turkey
  • 1/4 c. chopped onion
  • 1 clove garlic
  • 2 Tbsp. oil
  • 1 Tbsp. flour
  • 1 tsp. salt and pepper
  • 1 tsp. oregano
  • 2 large ripe tomatoes
  • 1 medium eggplant
  • 1 c. grated sharp cheese

Method

  • Brown meat, onion and mashed garlic in oil.
  • Add flour and seasonings.
  • Stir and cook for 5 minutes.
  • Remove garlic.
  • Peel and slice eggplant.
  • Boil in salted water until just tender. Drain and set aside. Put browned meat on bottom of 1 1/2-quart casserole.
  • Arrange slices of cooked eggplant and sliced tomatoes on top.
  • Sprinkle with salt and pepper.
  • Cover with grated cheese.
  • Bake at 350° for 30 to 40 minutes until cheese is melted and bubbly.
  • Makes 4 to 6 servings.
