Ingredients
- 5 lb. potatoes, peeled and diced small
- 6 hard-boiled eggs, diced
- 3 to 4 c. milk
- 1 small/medium onion, diced very small
- 1 stick butter
- 1/4 to 1/2 c. flour (to thicken)
- parsley (for color)
- salt and pepper (to taste)
Method
- Boil potatoes in minimum amount of water; add parsley, butter, onion, salt and pepper.
- Boil until tender.
- Add milk, flour and eggs; then add to boiled potatoes.
- Bring to a slow boil, stirring often.
- Serve very hot.
