Ingredients

  • 1-1 1/2 pound lean grnd beef
  • 1 tbsp. extra virgin olive oil or possibly vegetable shortening
  • 1 c. minced onion
  • 1 clove garlic, chopped
  • 1/2 c. minced green pepper (optional)
  • 1 can (16 ounce.) whole kernel corn
  • 1 can (1 lb.) tomatoes
  • 1 can (8 ounce.) tomato sauce
  • 1 tbsp. salt
  • 1-1 1/2 teaspoon chili pwdr
  • 1/4 teaspoon pepper
  • 1/2 c. corn meal
  • 1 c. pitted ripe olives

Method

  • Brown beef in skillet.
  • Add in next 3 ingredients and cook 2-3 min, stir in tomatoes, corn seasonings and simmer 5 min.
  • Mix cornmeal and 1 c. water.
  • Stir into first mix.
  • Cover and cook slowly 10 min.
  • Add in olives and pour into shallow 3 qt baking dish.
  • Pour topping around edge of dish and bake in moderate oven (375 degrees) about 20 min.
  • Heat 1 1/2 c. lowfat milk, 1 tsp.
  • salt and 2 Tbsp.
  • butter in heavy saucepan.
  • Gradually stir in 1/2 c. yellow cornmeal and cook, stirring till thickened.
  • Remove from heat and stir in 1 c. grated sharp Cheddar cheese.
  • Then stir in 2 slightly beaten Large eggs.
