Ingredients

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 Tbsp. chili powder
  • 2 tsp. salt
  • 12 corn tortillas
  • 2 Tbsp. shortening
  • 1/2 lb. American cheese, grated
  • 1 pt. enchilada sauce

Method

  • Brown meat, onion, chili powder and salt in skillet; drain the grease.
  • Soften tortillas, one at a time, in skillet with grease over low heat.
  • Immediately fill tortillas with meat mixture; roll and place in greased 9 x 13-inch baking pan.
  • Sprinkle 1/2 of the grated cheese and chopped onion on top of tortillas; pour on 1/2 of the enchilada sauce.
  • Repeat remaining cheese, onion and sauce. Heat in a 350° oven for 15 to 20 minutes or until cheese melts. Yields 6 servings.
