Ingredients

  • Rum steak or possibly beef BBQ strips
  • 1 1/2 tbsp. soy sauce
  • 1 teaspoon salt
  • 4 tbsp. vegetable oil
  • 1 head of broccoli (med. size)
  • 2 tbsp. oyster sauce
  • 2 tbsp. sugar
  • 1 tbsp. cornstarch
  • 1/8 teaspoon baking soda
  • 1 1/2 tbsp. water

Method

  • Cut off all fat on the meat.
  • Then slice it with the grain into 1/4 inch thick slices.
  • Add in 1 1/2 Tbsp.
  • soy sauce and 1 Tbsp.
  • vegetable oil to the meat mix.
  • Mix thoroughly till you have completely coated the meat.
  • Then let it stand for 10 min.
  • Cut the broccoli tops from the bunch.
  • Then peel the stems and slice at an angel.
  • Put stems, leaves and tops in a bowl.
  • Bring a large pot of water to a little boil.
  • Add in broccoli and blanch for 1 minute and then drain immediately.
  • Mix 1 Tbsp.
  • cornstarch, 1 1/2 Tbsp.
  • water and a healthy pinch of baking soda together.
  • Then add in this to the meat mix and stir well.
  • Add in 3 Tbsp.
  • of vegetable oil to wok.
  • When the oil is really smoky, then add in the meat mix.
  • Stir with a wok shovel and brown the meat for a few min, adding 2 Tbsp.
  • of sugar and 1 tsp.
  • salt.
  • Stir the meat again and add in 2 Tbsp.
  • of oyster sauce.
  • Add in the broccoli and stir the entire dish together.
  • Heat together for a few min and then serve.
  • Best brand of oyster sauce is Lee Kum Kee.
