Ingredients

  • 1 can black beans
  • 1/4 c. Italian salad dressing
  • 1/4 teaspoon pepper
  • 3/4 c. long grain, uncooked
  • 1/4 c. Italian dressing
  • Lettuce leaves
  • 3/4 c. shredded Cheddar cheese
  • 3 med. green onions
  • 1 med. tomatoes, minced
  • Lowfat sour cream, optional

Method

  • Combine first 3 ingredients.
  • Cover and refrigerateat least 8 hrs.
  • Cook rice omitting salt.
  • Rinse with cool water; drain.
  • Combine rice and 1/4 c. salad dressing, stirring well.
  • Refrigerateat least 8 hrs.
  • Spoon rice into individual lettuce lined plates.
  • Spoon bean mix over rice.
  • Top with cheese, green onions, tomatoes and if you like, lowfat sour cream.
