Ingredients

  • 1 medium onion, chopped
  • 1 garlic clove, chopped
  • 1 celery stalk, chopped
  • 3 Tbsp. olive oil
  • 1 (8 oz.) can tomatoes, drained and cut up
  • 1/2 tsp. salt
  • pepper to taste
  • 1 qt. warm water
  • 8 oz. ditalini
  • 1 can white cannellini beans

Method

  • Brown onion, garlic and celery in olive oil until soft and transparent.
  • Add tomatoes, salt, pepper and water.
  • Bring to a boil; add macaroni.
  • Cook 8 to 10 minutes, covered, or until almost tender.
  • Add beans with their liquid.
  • Cover and cook for another 5 minutes, or until macaroni is tender and beans heated through.
  • Serve with grated Parmesan and Romano cheese.
  • Serves 4 to 6.
