Ingredients
- 1 medium onion, chopped
- 1 garlic clove, chopped
- 1 celery stalk, chopped
- 3 Tbsp. olive oil
- 1 (8 oz.) can tomatoes, drained and cut up
- 1/2 tsp. salt
- pepper to taste
- 1 qt. warm water
- 8 oz. ditalini
- 1 can white cannellini beans
Method
- Brown onion, garlic and celery in olive oil until soft and transparent.
- Add tomatoes, salt, pepper and water.
- Bring to a boil; add macaroni.
- Cook 8 to 10 minutes, covered, or until almost tender.
- Add beans with their liquid.
- Cover and cook for another 5 minutes, or until macaroni is tender and beans heated through.
- Serve with grated Parmesan and Romano cheese.
- Serves 4 to 6.
