- 2 c. rice, cooked
- 2 (10 oz.) pkg. frozen broccoli, cooked per pkg. directions
- 1 lb. Velveeta cheese, melted
- 1 can cream of shrimp soup
- 1 lb. shrimp, boiled and peeled
- 1 c. onions, finely chopped
- 1 clove garlic, finely chopped
- 3 Tbsp. butter
- Ritz cracker crumbs
Method
- Add soup to cheese; heat.
- Be careful not to burn cheese. Saute onions and garlic in butter; add to cheese mixture.
- Add rice and broccoli to mixture; gently stir.
- Add shrimp.
- Top with crumbs.
- Heat at 300° until bubbly.
- Serves 6 to 8 people.
