Ingredients

  • 2 c. rice, cooked
  • 2 (10 oz.) pkg. frozen broccoli, cooked per pkg. directions
  • 1 lb. Velveeta cheese, melted
  • 1 can cream of shrimp soup
  • 1 lb. shrimp, boiled and peeled
  • 1 c. onions, finely chopped
  • 1 clove garlic, finely chopped
  • 3 Tbsp. butter
  • Ritz cracker crumbs

Method

  • Add soup to cheese; heat.
  • Be careful not to burn cheese. Saute onions and garlic in butter; add to cheese mixture.
  • Add rice and broccoli to mixture; gently stir.
  • Add shrimp.
  • Top with crumbs.
  • Heat at 300° until bubbly.
  • Serves 6 to 8 people.
