Ingredients
- 1 cup cornmeal
- 1 cup flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 egg
- 3 tablespoons sugar
- 3 tablespoons melted butter
Method
- Preheat oven to 350°. Grease an 8-inch square pan. with butter.
- Combine the dry ingredients in a bowl. Combine the wet ingredients (including sugar) separately. Stir the wet mixture into the dry, mixing just enough to thoroughly combine. Spread into the prepared pan.
- Bake for 20 minutes, or until the center is firm to the touch. Slice into squares and serve.
- Variations: Add corn kernels, grated cheese, scallions, and/or chopped jalapenos to the batter.
