Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • 3 tablespoons sugar
  • 3 tablespoons melted butter

Method

  • Preheat oven to 350°. Grease an 8-inch square pan. with butter.
  • Combine the dry ingredients in a bowl. Combine the wet ingredients (including sugar) separately. Stir the wet mixture into the dry, mixing just enough to thoroughly combine. Spread into the prepared pan.
  • Bake for 20 minutes, or until the center is firm to the touch. Slice into squares and serve.
  • Variations: Add corn kernels, grated cheese, scallions, and/or chopped jalapenos to the batter.
