Ingredients

  • 2/3 c. onion, chopped
  • 1/2 stick butter
  • 1 clove garlic, minced
  • 1 lb. fresh mushrooms, sliced
  • 1 c. quick barley
  • 1/4 c. parsley
  • 2 tsp. chicken bouillon
  • 1 tsp. basil
  • pepper
  • 1 1/3 c. hot water

Method

  • In a large casserole with lid, combine onion, butter and garlic.
  • Cover and microwave on High 5 minutes.
  • Add rest of ingredients and microwave 5 minutes on High, then 20 minutes on Medium.
  • Don't stir while cooking.
  • Let stand 5 minutes.
  • Fluff with fork.
  • This is delicious and great with chicken.
