Ingredients

  • 1 c. flour
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 c. butter or margarine (at room temperature)
  • 1/2 c. light brown sugar
  • 1/2 c. granulated sugar
  • 1/2 c. peanut butter
  • 1 large egg
  • 1 tsp. vanilla extract
  • chocolate chips (optional)

Method

  • Heat oven to 350°.
  • Have cookie sheets ready.
  • Mix flour, salt and cinnamon.
  • Put remaining ingredients into a large bowl.
  • Beat with electric mixer until well blended.
  • Gradually add flour mixture, beating just until blended.
  • Drop heaping teaspoon 1 1/2-inches apart onto ungreased cookie sheet.
  • Bake 10 to 12 minutes at 350° until lightly golden.
  • Do not overbake.
  • Remove to wire rack to cool.
  • Can be pressed with a fork dipped in sugar for a crisper cookie.
