Ingredients
- For the wraps
- 4 bananas (cut in half, then lengthwise three times into 1 cm-thick slices)
- Large spring roll wrappers (215mm square)
- Cooking oil (not olive oil)
- For the sauce
- 1/2 cup sugar
- 1/8 cup boiling water
- 30g unsalted butter
- 1/2 cup brown sugar
- 1/2 tsp vanilla essence
- 50ml cream
Method
Stack 2 or 3 slices of banana in the centre of a wrapper and roll it like a spring roll. Dampen ends. Repeat with the rest of banana slices.
Heat the oil in a frying pan and shallow or deep fry for 2-4 minutes on medium heat until golden brown.
For the sauce
Dissolve the sugar in the boiling water, stirring over a low heat until golden brown. Remove from the heat and add butter. Return to heat then add the sugar and stir until combined. Add the vanilla and cream.
For a chocolate variation, use chocolate and single cream in equal parts. Melt the chocolate in a double boiler then add the cream.
Pour warm sauce over the wraps and serve with vanilla ice-cream.
