Ingredients

  • 1-1/2 teaspoon Baking Powder
  • 1/2 teaspoons Baking Soda
  • 2 cups Whole Wheat Flour
  • 1 teaspoon Cinnamon
  • 1/2 teaspoons Ground Nutmeg
  • 1 stick Butter, At Room Temperature
  • 2/3 cups Sugar
  • 3 whole Medium Ripe Bananas, Mashed
  • 2 teaspoons Vanilla Extract
  • 1/2 cups Coconut Milk

Method

  • Line your muffin tin with papers (recipe makes 12 muffins), and set aside.
  • In a small bowl, whisk together the baking powder, baking soda, flour, cinnamon and nutmeg. Set aside.
  • In the bowl of your mixer, beat the butter and sugar until light and fluffy.
  • Add the mashed bananas, vanilla and milk. Beat until combined.
  • On low speed, mix in the flour mixture until combined.
  • Beat at medium speed for 1-2 minutes, until batter is smooth.
  • Fill the lined muffin tins with the batter. Let rest while you preheat the oven to 350 degrees F.
  • Once the oven reaches 350F, bake the muffins for 20 minutes, or until a toothpick comes out clean after sticking it into the center.
  • Let cool, and enjoy!
