- 1-1/2 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 2 cups Whole Wheat Flour
- 1 teaspoon Cinnamon
- 1/2 teaspoons Ground Nutmeg
- 1 stick Butter, At Room Temperature
- 2/3 cups Sugar
- 3 whole Medium Ripe Bananas, Mashed
- 2 teaspoons Vanilla Extract
- 1/2 cups Coconut Milk
Method
- Line your muffin tin with papers (recipe makes 12 muffins), and set aside.
- In a small bowl, whisk together the baking powder, baking soda, flour, cinnamon and nutmeg. Set aside.
- In the bowl of your mixer, beat the butter and sugar until light and fluffy.
- Add the mashed bananas, vanilla and milk. Beat until combined.
- On low speed, mix in the flour mixture until combined.
- Beat at medium speed for 1-2 minutes, until batter is smooth.
- Fill the lined muffin tins with the batter. Let rest while you preheat the oven to 350 degrees F.
- Once the oven reaches 350F, bake the muffins for 20 minutes, or until a toothpick comes out clean after sticking it into the center.
- Let cool, and enjoy!
