Ingredients

  • 1 cup Chopped Pecans
  • 2 Bananas
  • 2 Eggs
  • 1/2 teaspoons Baking Soda
  • 1 teaspoon Apple Cider Vinegar
  • 1 teaspoon Pure Vanilla Extract

Method

  • Blend pecans in food processor until smooth, the consistence of peanut butter.
  • Add bananas and blend until smooth. Add eggs and continue to blend. Add baking soda, apple cider vinegar and vanilla extract and blend once more.
  • Pour batter into paper lined muffin tins (I usually get 9-10 muffins). Bake at 400°F for 10-15 minutes or until the muffins don't jiggle like the back of my arms.
